Zucchini-potatoes
What to have:
3-4 zucchinis
3-4 potatoes
3-4 tomatoes or tomato juice
3-4 garlic cloves
some parsley
some spearmint
olive oil
salt
pepper
water
What to have:
3-4 zucchinis

How to do it:
- Preheat the oven in 350F.
- Cut the zucchinis and potatoes in thin slices
- Mince the garlic cloves, parsley and spearmint
- Grate the tomatoes (use add the tomato juice)
- Combine everything in a pan, add olive oil, salt, pepper and mix
- Add some water and place into the oven for 1h30'.
- Serve with feta cheese and bread.

Extra tips:
! You can add oregano or replace the spearmint with mint.
! Stir the vegetables occassionally (every 30').
! Let it rest for 5-10 minutes outside the oven. (Do not eat it super hot!)
