What to have:
2 swordfish fillets
1/2 red pepper
1/2 green pepper
1/2 cup olive oil
1/2 garlic clove minced
1/2 cup balsamic vinegar
1 tablespoon honey
1/4 cup of thyme
pepper
salt
How to do it:
- Wash the vegetables and cut them in small pieces.
- Season the vegetables and add 1 teaspoon of olive oil.
- Grill them, add half the balsamic vinegar and some thyme.
- In a shaker or glass container, mix the following: honey, the rest of the balsamic, the rest of the olive oil, thyme, garlic, pepper, salt. Shake / mix it well.
- Add 3/4 of this dressing on the fillets and grill them for 3-4 minutes each side.
- Pour the remaining dressing on the fillets, serve with the vegetables and / or rice.
Extra tips:
! You can use any color of peppers you prefer. You can choose any vegetable you like better.
