What to have (3 portions):
1/2 package lentils
1/2 onion
1-2 bay leaves
1-2 garlic cloves minced
1/2 can of tomato sauce
some olive oil
some balsamic vinegar
salt
pepper
water
How to do it:
- Clean and wash the lentils.
- Boil them for 10'.
- Remove the water, add new (hot) water and bring to boil again over MEDIUM-SLOW heat.
- Add the tomato sauce, the onions, garlic, bay leaves and water (to cover the lentils).
- Boil for 30-40'. (Check that the water is adequate and stir in between.)
- Add salt, pepper, the balsamic vinegar and the olive oil and stir.
- Continue for 5-10' until the lentils become tender.
- Serve with feta cheese, bread and vinegar.
